Satiagel™ U and Satiagum™ U carrageenans

Carrageenans are polysaccharides (galactose) with varying degree of sulfatation. They are extracted from red seaweeds and are used as thermo reversible gelling and thickening agent.

The carrageenan family is extremely diverse: It can be broadly classified into three "ideal" types split into two groups – gelling and thickening.

Gelling carrageenans

These kappa and iota carrageenans form a transparent, elastic gel with thixotropic properties. These properties are very useful in certain applications, such as pharmaceutical emulsions and syrups.

Gelation of kappa carrageenan is particularly enhanced by the presence of potassium. It induces gel formation at very low concentrations creating a strong and brittle gel.
